Happy Independence Day and Shabbat Shalom!

Today is Israel’s 70th birthday and the day they commemorate their Independence as a nation. All across Israel, there are families and friends gathered together in backyards, at the beach and at parks having their own Braii celebrating Independence Day! We found a unique recipe that several “Jerusalemites” told us about. In addition to the traditional variety of meats on the Braii, salads and chips they have a baked potato recipe we thought would be interesting to share. This might be a fun addition to your own braii this weekend! Let us know if you try it and how it turned out!

Ingredients:

6 baking potatoes (or one for each person at your table)

6 eggs

Olive oil

Salt and pepper

If you like it spicier feel free to add paprika or any spice that you prefer.

Directions:

1-Wash the potatoes, pat dry and then rub some olive oil all over the potato.

2-Cut the raw potatoes in half.

3-Scoop out a “pocket” in the middle of each side, not too big.

4-Crack one egg into the pocket on one half of the potato.

5-Add some salt and pepper or the spice you prefer, and then put the other half of the potato back on top of the side holding the egg.

6-Wrap in foil and place on the fire, let bake for about 15 minutes and then check occasionally for doneness.

7-Unwrap, add any condiments you wish and enjoy!
