Last Day of Passover and All that Matzah!

Tonight is the last evening of Passover and by tomorrow, Friday evening, Passover will be complete for another year. It seems inevitable that there will be boxes of extra matzah sitting around that didn’t get eaten. So what to do with it all? Well, we can’t help you with ALL of them but may we suggest getting the kids involved and making some Matzah Pizza? And maybe some Matzah Bruschetta for the adults? These are two incredibly easy and quick to prepare recipes that the kids can certainly get involved with! And they are great for a Saturday afternoon at home. Making family time interactive can really do a lot towards keeping families strong and who doesn’t love pizza?? Even if it IS on matzah!  So let’s get to it!

Matzah Pizza

 

Matzah PizzaIngredients:

Spaghetti sauce or Pizza sauce

About 3 cups of shredded mozzarella

1 box of matzah

Seasoning of your choice~we like a traditional pizza seasoning like basil, oregano or rosemary!

Toppings can be olives, basil leaves, mushrooms or tomato, or anything else you like

 

Prepare:

Here is where you can get the kids involved! Line up the ingredients and make an assembly line~each kid and adult if they want to help, does one task each to complete the pizza. We suggest naming a person that this matzah pizza will be made for so that they can “oversee” and choose their own toppings! Then everyone can rotate for the next pizza to be made and the that person will take their place at the topping station.

So it can go something like this:

First, one spreads a tablespoon of sauce on each matzah, a little more if you like but not too much or it will make the matzah soggy!

The next one can sprinkle on the seasoning lightly and pass it on.

The third person then adds the cheese and passes to the toppings station.

The person whose pizza is being made will add the toppings they want and add their pizza to a baking sheet.

Lastly an adult or older child can place the cookie pan under the broiler for a few minutes to let the cheese melt and get lightly golden brown.

Transfer to a plate and enjoy while hot! That’s it!

Now for the Matzah Bruschetta

Matzah Bruschetta Ingredients:

Matzah
2 large tomatoes, diced
1 clove of garlic, minced
1 three-finger pinch of kosher salt
Fresh ground black pepper
1 tablespoon of olive oil
5 leaves of fresh basil
Shaved parmesan

Preparation:

  • Combine the tomatoes, garlic, salt, pepper, and oil in a bowl.
  • Stack the basil leaves on top of each other and then roll them up. Cut through the stack to form ribbons.
  • Stir the basil into the tomato mixture.
  • Let sit for 10-20 minutes.
  • Spoon the bruschetta mixture on to matzah and then top with shaved parmesan. (recipe from pjlibrary.org)
