A Passover Breakfast recipe

Matzo Brei, a favorite of the Ashkenazi Jewish crowd, is a Passover breakfast dish that is delicious, versatile and best of all, easy to make! When there are recipes that you only use once a year at a certain holiday, they can become a fun tradition that your family looks forward to, especially the kids. Some kids love to crack the eggs for you and although there may be some “fishing” for the shell pieces, it’s worth it to see their enjoyment.

You can prepare it as we suggest here, with the basic recipe which makes it easy to dress up with cinnamon sugar on top, maple syrup or upgrade with a melted cheese of your choice. Because it is such a quick recipe, it makes a great option when you are short on time. One can almost imagine that this is a recipe that was thought up on the trail from Egypt back to the Land of Israel by the ancient Israelites.

Son: “hey mom, this matzah is dry and boring!”

Mom: “So, crack a couple of eggs and make an omelet with it!”

Matzo Brei Recipe~

4 servings, 5 minutes prep, 20 minutes total time

  • 4 matzos (8-inch squares)
  • 4 large eggs
  • 1/8 teaspoon ground nutmeg
  • Coarse salt
  • 2 tablespoons butter

 

  1. Break each matzo square into small pieces into a medium bowl. Add boiling water to lightly cover, and soak until moist, let sit for 2 or 3 minutes; squeeze or press matzo and drain any excess water.
  2. Add eggs, nutmeg, and 1/2 teaspoon salt to softened matzo, and mix all ingredients together.
  3. Heat 1 tablespoon butter in an 8-inch nonstick skillet over medium heat; add mixture, and press in gently. Cook until browned on underside, 4 to 6 minutes; flip and cook for an additional 4 to 6 minutes.
  4. Turn cake out of skillet, and cut into wedges. Serve hot.
